#245 Ukoy

Ukoy or okoy (shrimp fritters) is a native Filipino food believed to have originated from the province of Laguna. It is a popular afternoon snack although it is also eaten as a tasty side dish.

Besides shrimps, the standard ingredients used in making ukoy are bean sprouts and tofu. After adding rice flour, it is deep fried to give its distinct crispiness. Other variations in the filling for ukoy are shredded cabbage, carrots, snow peas, leeks and bean sprouts.  Fish sauce and black pepper are added to the batter for taste. With onion leaves as garnish, a light sweet-sour or soya sauce goes well with okoy.
